my first introduction to it was in a now-closed place in South Carolina that put it on a burger, and maybe it's cause of nostalgia but I think that's a better use of it than just having it on a sandwich (and that's a pretty damn good use for it on its own)

@nowionlywantatriumph @kate my old boss used to work at a cheese factory. he said that whenever they got a bad batch of cheese making milk that had slightly too many impurities or whatever, they'd put it in the pimento cheese pipe. the added mass of the pimentos would bring the overall level of impurities in the cheese back down to within FDA spec
